Flax Seed Muffins with Pear Butter

This recipe underwent a lot of revisions based on what was in our kitchen that night, so I’m going to turn you over to K:

(The muffins are hearty and great and I do want some right now but it is after 11 on a school night and I’m old.)
Actual recipe:
2/3 cup ground flaxseed meal
1/2 cup smooth almond butter
1/2 cup plain nondairy milk
1/3 cup pure maple syrup
Optional:
1 teaspoon vanilla extract
1/4cup chopped dried fruit or miniature chocolate chips
Changes made: I measured 2/3 c of flax seeds and then ground them in a coffee grinder. Did not measure after grinding, but am quite certain I wound up with more than 2/3 c ground flax seeds. Didn’t have seed/nut butter, so I put 1/2 c. of hemp seed kernels in the coffee grinder and made kind of a smear paste. (Doesn’t sound great, and it didn’t look great, but I think it got the job done.) Used 1/2 c regular milk–there was a Parks and Rec joke in a later season that makes “beef milk” part of my vocabulary–and in lieu of 1/3 c maple syrup I used some honey. Some. In that I held the 1/3 cup measure over the batter and poured something like that volume into the bowl. I’m not getting another measuring cup dirty for a small amount of honey, even though my magic husband does most of the dishes.
Should have greased muffin tin as instructed. Served with a bit of butter and a dab of pear butter.
The Story So Far
Katie made these on a night when I wasn’t feeling up to much. I try to be open minded, but the idea of a flax muffin made with homemade hemp butter did not drag me out of bed to watch the process unfold. That was a mistake.
She brought me tiny nuggets of dark brown muffin, dressed with butter and pear butter. The muffins are hearty and warm and pear butter is amazing on top. We’ll make these again, so definitely watch this space for variations.

The original recipe is Vegan, so go give that a look if you don’t want to use milk, butter, or honey.
